Missenyora is the name formerly given to the abbesses of the monastery of Vallbona. Certified organic viticulture without irrigation. Manual harvest and pressing with whole grapes and skins. The wine ferments at controlled temperature (15-17°C) in American (80%) and French (20%) oak barrels, with the percentage of new wood never exceeding 15% to preserve the varietal character of the Macabeu grape. It is aged on its own lees and stirred every week to improve its mouthfeel. Before bottling, depending on taste, we add a quantity of concentrated grape must that gives the wine its semi-dry character, making it exuberant and original.
