After selection in the vineyard, the grapes are gently crushed to extract only the free-flowing, unpressed juice. In the cellar, the two grape varieties are vinified separately to preserve their individuality. Fermentation and ageing take place for five months in French oak barrels. Once fermentation is complete, batonnage is carried out for two months, three times a week at first and once a week for the second month.
