The options may be chosen on the product pageThe first press fraction of zalema is aged in casks where oxidative aging of the aromatic variety has taken place. In the case of the listán, it is aged in 400L French oak barrels where it develops its aging under a flor yeast film. After aging is complete, we blend and bottle. Medium-high intensity. Ripe, baked white fruit (Golden Delicious apple). With aeration, notes of dried stone fruit (apricot) also appear, along with milky hints of dulce de leche and a low-mountain bouquet of balsamic herbs like chamomile. A velvety and balanced mouthfeel. A long finish with a fresh touch from the acidity. The fruit weight returns, along with candied citrus peel and a smoky finish. It has a strong mineral and saline character, due to its proximity to the sea.

After more than a year of work restoring the vineyards, Bea and Felix realized that what had been presented to them as “Verdejo Mayor” was actually Palomino or Jerez. As this grape is not very expressive on the nose, they decided to go south and favor an aging in “velo de flor”. Like all their wines, alcoholic fermentation takes place spontaneously in 300-liter barrels and in a sherry cask, where the wine matures organically for 12 months.
