Elisenda expresses the freshness and acidity characteristic of the 60-year-old Parellada vineyards at high altitude in the Pla de Manlleu region, as well as the minerality and salinity provided by the red Xarel-lo grown around the Masia de Can Mayol estate in Vilob\u00ed del Pened\u00e8s. The first fermentation of this sparkling wine is carried out in terracotta amphorae, a method in which Loxarel was a pioneer and has a long experience. Appearance: Onion skin color, pale tones and fine and constant perlage with small bubbles. Aroma: Elegant and subtle, notes of autolysis with hints of minerality, undergrowth and fennel.
