The grapes are harvested in 12-15 kg crates, followed by cryomaceration before fermentation to enhance the varietal aromas. The must is then fermented in stainless steel vats where the skins macerate with it. Fermentation with the skins lasts between sixteen and eighteen days at a controlled temperature of 26°C (79°F). Once fermentation and maceration with the skins is complete, the vat is transferred to old French oak barrels, where it remains throughout the winter and spring before being bottled and aged in the cellar for twelve months at a constant temperature in the dark.

Fermentation in concrete vats with manual punching down. Aged for 14 months in 30-hl eggs and Austrian oak vats. 50% of the stems were used in fermentation with indigenous yeasts.

Destemming and cold maceration before fermentation for 5 days at 8°C in stainless steel vats to extract as much fruit character as possible. Manual pumping-over of the pomace cap with two daily pump-overs, one in the early morning and one in the late afternoon. Slow, controlled fermentation at a maximum of 28°C (82°F). The wine is racked to barrels for malolactic fermentation, followed by 12 months aging in American oak barrels (50% first fill, 50% second fill).
