Harvested by hand in 10 kg boxes in a single vineyard. The must ferments in stone vats, wooden barrels and steel tanks. Malolactic fermentation then takes place in French oak barrels, followed by maturation for 12 months.

The grapes are harvested on foot in the vineyard, where spontaneous fermentation begins with wild yeasts from the vineyard. Fermentation is completed in the winery in a stainless steel tank without temperature control and without additives to obtain a wine with minimal intervention. Fermentation is completed as soon as all the sugar has been consumed and the wine is then bottled. The wine has a straw yellow color. The nose is intense, with sweet aromas, notes of apricot and white peach and a salty touch of fennel. The palate is round and full-bodied, balanced and clear. It is characterized by its richness and a balsamic note.

Part of the harvest is composed of grapes affected by noble rot. The wine is vinified in small barrels of 25 hl and 50 hl at low temperature. Intense white wine on the nose, with notes of dried apricots and delicate geranium flowers. Balanced acidity on the palate with notes of apricot. The finish is persistent and intense.
